Personalized Vinyl Key Chain

Please send me a note with the Name, Vinyl color and thread color you would like on each key chain. They come with a complimentary color snap tab. If you do not want a snap I can replace it with a silver rivet upon request. 

Available in your choice of glitter or matte vinyl and your choice of thread color.

Chicken Apple Cranberry Salad

Serve this over a bed of lettuce or wrap in Romaine 


13 oz Canned Chicken
1/2 cup Hellman's light mayonnaise
1 Apple, medium, chopped with skin
1 oz Dried Cranberries
1 tablespoon Truvia
1 teaspoon apple cider vinegar
1/2 teaspoon cinnamon

 In a large bowl, add mayo, chopped apples, cranberries, Truvia, vinegar and cinnamon, mixing well until combined.

Add chicken and toss to coat.
Keep refrigerated until ready to use.  Serve over lettuce or wrap in Romaine.
Makes 4 servings

Chicken Salad

Chicken Salad WW 3 PP

Great for a sandwich or on a bed of lettuce.

13 oz  Can Daily Chef Chicken
1/2 cup celery, finely diced
1 tbsp dill relish
1/4 cup hellmans light mayonnaise
2 tbsp reduced-fat sour cream
1 tsp parsley
1 tsp dill
1 tsp Dijon mustard
1 tsp fresh lemon juice
1/2 tsp table salt
1/4 tsp black pepper, freshly ground

Place all ingredients in a large bowl; mix until blended.

Makes 4 servings

Lighter Potato Salad

Lighter Potato Salad WW 6 PP

Light in calories but not in taste.

4 medium Russet potatoes (2 lbs)
2  Hard Cooked Eggs, chopped
1/2 cup celery, chopped
1/2 cup onion, chopped
1/2 cup Hellmans light mayonnaise
1/2 cup fat-free sour cream
1 tablespoon yellow mustard
1 teaspoon cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper


Peel and cube potatoes.

Place potatoes in 4-quart saucepan with just enough water to cover potatoes. Heat to boiling. Reduce heat to low and simmer about 10 minutes or until tender. Drain; let stand until cool.

In large bowl place everything except potatoes, mix  until well blended.  Add cooled potatoes and toss gently until well blended.

Sprinkle with paprika (optional)
Cover and refrigerate at least 1 hour before serving.

Makes 6 servings about a cup each,  WW 6 PP

I used russet potatoes but you can substitute any kind you like.
Potatoes can also be cooked in the microwave instead of on the stove.

Muffin Cakes - Yellow Angel Food

Muffin Cakes - Yellow Angel Food WW 3 PP


This recipe is based on the 3-2-1 mug cake recipes you see everywhere. 
I love them but wanted to bake them instead of using the microwave.
So I figured out the recipe to make 6 at a time.
Using 2 dry cakes mixes -
Angel food cake mix(Betty Crocker) and 
Yellow cake mix (Duncan Hines)
Mix both boxes of cake mix together.  Stir to combine.

Measure 1 1/8 cup of combined mix (18 tbls)
Mix with 3/4 water.
Spray muffin pan

Pour batter into a greased muffin pan.
Bake at 350 for 15 minutes
Makes 6 servings ww 3 pp

Store the remainder of the mix until you get the urge for a single microwave mug version or bake another 6.

Impossible Egg Sausage Muffins

Impossible Egg Sausage Muffins 4 WW PP 


Make ahead of time for a breakfast you can pop in the microwave and heat up.

You can use any veggies you like in place of the onions and peppers and it won't change the points.

I forgot to take a picture but will post one next time I make them.

Ingredients
1/2 cup Hood Calorie Countdown fat-free milk
1/2 cup Bisquick heart smart
1/2 cup Sargento Reduced Fat 4 Cheese Mexican Shredded Cheese
3 Egglands best eggs
3/4 cup Better'n Eggs
1 cup Pictsweet 3 Pepper and Onion Blend Pack
3 Great Value Turkey Sausage Patty

Preheat oven to 375

Add all ingredients except onions, peppers and sausage into a mixing bowl and stir until well combined.

Chop up onions and peppers (can use fresh or frozen) and set aside.

Put frozen sausage patties in microwave for about 1 minute to thaw them out. Chop them up after thawing into small chunks.  Add to onion and peppers, stir until mixed.

Spray either a large muffin cup pan 6(1 cup each) or a 12 muffin cup pan (regular size) with Pam.

Put about 2 tablespoons egg mixture into each muffin cup, then add equal amounts of  the onion, pepper, sausage to each muffin cup.

Use the remaining egg batter to fill each muffin cup about 3/4 full.  They expand when cooking so don't fill them to the top.

Bake in preheated oven 25-30 minutes.  Let cool before eating.

These can be refrigerated or freeze well.
Reheat about 60-90 seconds until hot.
Makes 6 servings - ( 1 large muffin or 2 regular)

I got mine at Ollie's for about half the amazon price.
It's non stick but I spray it anyway, just to be sure it won't stick.
And it fits in my toaster oven so I don't have to use the big oven.
